Moroccan beef skewers with peach salsa
700g beef rump steak
1-2 tablespoons Moroccan spice
1 large red onion
spray oil
Salsa: 1 cup cubed fresh or canned peeled peaches
1/4 cup chopped pitted dates
1/3 cup chopped coriander leaves and stalks
2 teaspoons each: grated lemon rind, lemon juice
Cut beef into 3cm cubes. Sprinkle with spice mix. Cut onion into 12 pieces.
Thread beef and onion alternately on 4 to 8 skewers. Spray with oil. Combine the ingredients for the salsa in a bowl.
Cook skewers under a pre-heated grill for about 2 minutes each side, until cooked to your preference.
Serve with the salsa on the side. Great with mashed kumara and a salad. Serves 4.
